I love making bread! It’s kind of an obsession of mine. I very rarely buy bread, rolls, buns or tortillas anymore. Partly to avoid some ingredients, but also because it’s just fun to make. I make some sort of dough every other day at our house.
I know not everyone is as into making bread as I am. Maybe it’s just not your thing, or maybe you just don’t know where to start. But today I wanted to share my favorite bread recipes. I’ve found that each of these are easy and delicious. Some you could make in less than an hour, and others you will need several hours. I list below how long each one takes me. But remember that a huge majority of that time is rising time.
One Hour Dinner Rolls
This is one I have used at least once a month for over 3 years. And it’s a great one if you are still getting comfortable with making bread. When we head to a friend or families house for dinner, these are what I bring. I use this one because it is so easy, quick, and they literally always turn out delicious. These are called one hour rolls, but give yourself around 90 minutes.
Easy Rustic Crusty Bread
A cute gal from my church shared this at an activity last year. It is an extra easy recipe. It’s delicious and easy. This one takes about 4 hours, but only about 5 minutes of that is actual hands on work. And this bread recipe makes the best grilled cheese! A dough like this is called a “lean dough.” Lean doughs don’t have a fat (like butter or oil) and this produces a harder crust. (I won’t get into all the science about why this happens, but it’s super cool and interesting). My husband likes this bread, but prefers a softer crust. So sometimes I add about a bit of melted butter to this one (just adjust my other liquids to accommodate).
Quick And Easy Hamburger Buns
If you want your next burger to be next level, use this recipe and grass fed beef. Seriously, it makes the best burgers I’ve ever had. For this recipe, I swap butter for canola oil and it turns out amazing every time. This is another super easy bread recipe, and it takes less than an hour to make. You could also use this recipe and form rolls instead of buns.
Hoagie Rolls
This bread recipe is great for things like French Dip Sandwiches or Philly Cheesesteaks. If you are planning on these for dinner, you’ll want to start a bit earlier in the day or the day before. But it only takes 3-4 hours depending on how long you let it rise. Each time I’ve made these ones, I’ve had to stop my kids from eating all of them before dinner. They love them!
Ciabatta Rolls

Okay, I almost didn’t add this one to the list because ciabatta rolls are a bit tougher for me. And there are two different recipes I use (linked above). Before you try either of those though, I recommend watching this YouTube video. Her recipe is pretty similar, but takes over 24 hours. The recipes I linked only take maybe 4-5 hours. However, the YouTube video really helped me understand some of the techniques when I first started making ciabatta (like shaping the rolls, and the stretch and fold). She has tons of other bread recipes that she shares on her YouTube too if you want to try any other recipes.
Flour Tortillas
We love homemade tortillas around here. They are delicious and pretty quick. And now the store bought ones just can’t compare. My only issue so far is that I am so bad at rolling them out! I usual end up with one of two each batch that are just wacky shapes. Luckily my kids still love them no matter what shape they are. There are a few YouTube videos that I found that have helped me make them at least sort of resemble a circle. And I get a little better every time! We make these about once a week and keep them in the fridge.
Before you dive into this recipe though, I want to share a quick tip. This recipe has you put unmelted butter in the bowl with the dry ingredients, then pour hot water over top. If you follow the recipe as it is written, make sure your water is boiling hot! OR to make it easier – I put the butter and water together in a saucepan on the stove. Once the butter is all melted, I pour the butter and water in with the dry ingredients.
